On freeze-drying:
In this unique method of drying (not comparable to regular dried vegetables), the vegetables are harvested at exactly the right time and then immediately frozen at very low temperatures (-50 to -80 degrees Celsius). Then, very slowly, most of the ice is removed. The low temperature ensures optimal preservation of flavour and texture. By post-drying, the last bits of water are removed. The remaining vegetables are very light in weight but still contain almost all nutrients. In the final stage, the freeze-dried vegetables are ground into a fine powder, which is easy to use in all kinds of dishes. Due to the intense flavour and concentration of nutrients, you only need a small amount of powder at a time!
